looking for advice on logging hours for appliction

I am a currently going to college for IT PM through Capella University. I want to start the PMP certification process, i spoke with PMI about using my work experience for satisfying the hours requirement. i currently work for Norfolk southern railroad as a track maintenance foreman, while the PMI said this would be applicable work experience i have no idea how i would log 7500 hours worth. my projects are mostly 1-2 day projects with the rare jobs extending past it. i would have to go back roughly 3.5 years and log from there out. at that time PMP certification was not a thought in my head and i do not have any records. I have spoken with my supervisors and division engineers who asked if there was anyway they could write any sort of document verifying my hours and experience. i have not contacted the PMI with this notion yet as i am looking for possible answers from candidates that may be in a similar position.

I should also elaborate on my job a bit. I am responsible for the structure and safe passage of 80 million gross tons of freight that travels through our territory. I receive my direct instructions from my supervisor, coordinate time between train passage, and manage a team of fellow employees to inspect, repair, or replace different aspects of the railroad track structure. in doing this i cover the focus areas of pm; Initiating, planning, executing, monitoring and controlling, and closing. most of the time my daily project will last 8-10 hours sometimes less sometimes more. thus that is the issue i have how would i log so many projects especially ones that are 3.5 years ago.

Hi You are not required to give any details of your job, only split the hours between focus areas and make sure it is atleast 4500 hour. Your supervisor only has to sign the letter in case you are audited
