Contract types - Situations and scenarios

I am getting these questions wrong again and again. Is there a matrix of when to use what contract types. The attributes I think that influences contract types are:

1) Undefined scope vs defines scope.

2) Cost risk - High vs low

3) type of work - R&D etc , plumbing electrical etc, Subcontractors , outside contract etc.

4) Schedule risks. - when time is of essence etc.
